Last year we offered early spring king and it was a hit. We're doing it again this year. These kings are right out of the water! In most cases they will have been caught within a few weeks of when you get them in April. Weather can be terrible in March so the catch is always limited to just a few dozen Shares. Your order will ship to you in the form you are used to––boneless, vac sealed and frozen––but will be just about as fresh as you can get, especially late winter.

Tentative ship date is April 1, 2025.

Each Share is 10 lbs. Order as many Shares as you like.

**ADDED BONUS**
We typically find a few ivory (white) kings mixed in with the red kings. instead of sorting these out and selling them for the customary higher price, we are mixing them in. Although not guaranteed, you may find that you have one or more pieces of ivory king with your red king.

Cut:

  • Portion - Portions are a fillet cut into several pieces. We are shooting for 3/4 lb each but with king, they can sometimes be 1 to 1.25 lbs each. 

Bones:
I pull the pin bones by hand which results in a lovely and uniquely hand crafted fillet. My deboned king is generally 90-100% boneless with one or two pin bones sometimes remaining in the collar area of the fillet. The tail portion is naturally mostly or totally boneless.

Packaging:
I vacuum seal my salmon in heavy 5mm bags to avoid broken seals and freezer burn. virtually all other seafood is vacuum sealed in 4mm or lighter bags. Your fresh-frozen seafood will keep in your freezer in pristine condition for 12-15 months or more.
